  • 1 medium eggplant (aubergine)
  • 2 fresh tomatoes
  • 2 fresh mozzarella balls
  • 3 tbsp pesto sauce

  • 150 ml marinara or tomato sauce
  • 2 tbsp extra-virgin olive oil

How to Make Grilled Eggplant Parmesan

1. Grill the eggplant

Wash the eggplant and cut it into even round slices.

Heat a grill pan and grill the eggplant slices on both sides until tender and lightly browned.

2. Prepare the baking dish

Preheat the oven to 180°C / 350°F.

4. Bake

5. Add pesto and basil

Remove from the oven and finish with pesto and fresh basil leaves.

Serve warm.
