Ingredients

  • 400 g cooked chickpeas, drained
  • 1 ripe avocado, diced
  • 150 g cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 small red onion, thinly sliced
  • 30 g walnuts, roughly chopped
  • 3 tablespoons extra virgin olive oil
  • Juice of 1 lemon
  • ⅓ teaspoon sea salt
  • ⅓ teaspoon freshly ground black pepper

Method

1. Prepare the vegetables

Halve the cherry tomatoes, dice the cucumber and avocado, and thinly slice the red onion.

2. Combine the salad

Place the drained chickpeas in a large bowl and add the tomatoes, cucumber, onion, avocado and chopped walnuts.

3. Prepare the lemon and olive oil dressing

Whisk together the extra virgin olive oil, fresh lemon juice, sea salt and black pepper.

4. Dress and serve

Pour the dressing over the salad and toss gently so that the avocado keeps its shape.

Serve immediately.
