- Pink Himalayan salt or sea salt, to taste
- Fresh cracked black pepper, to taste
- 2 cups kale, de-stemmed and torn
- 1 cup purple cabbage, chopped
- Juice of ½ small lemon
- Fresh parsley, chopped (for serving)
Instructions
- Sauté Aromatics
- Heat oil in a large pot over medium-high heat.
- Add onion, garlic, and ginger. Sauté for 2 minutes, stirring occasionally.
- Add Vegetables
- Stir in celery, carrots, broccoli, and cauliflower.
- Cook for 2–3 minutes until slightly softened.
- Simmer Soup
- Add turmeric and diced tomatoes.
- Pour in water and bring to a boil.
- Reduce heat and simmer for 10–15 minutes, until vegetables are tender.
- Finish & Serve
- Add Italian seasoning, salt, pepper, kale, cabbage, and lemon juice during the last 2–3 minutes.
- Adjust seasoning to taste.
