  • 3 cups broccoli florets
  • 1 cup cauliflower florets

  • 1 (14.5 oz) can no-salt diced tomatoes (preferably organic)
  • 4 cups water
  • 1 tsp Italian seasoning
  • Pink Himalayan salt or sea salt, to taste
  • Fresh cracked black pepper, to taste
  • 2 cups kale, de-stemmed and torn
  • 1 cup purple cabbage, chopped
  • Juice of ½ small lemon
  • Fresh parsley, chopped (for serving)

Instructions

  1. Sauté Aromatics
    • Heat oil in a large pot over medium-high heat.
    • Add onion, garlic, and ginger. Sauté for 2 minutes, stirring occasionally.
  2. Add Vegetables
    • Stir in celery, carrots, broccoli, and cauliflower.
    • Cook for 2–3 minutes until slightly softened.
  3. Simmer Soup
    • Add turmeric and diced tomatoes.
    • Pour in water and bring to a boil.
    • Reduce heat and simmer for 10–15 minutes, until vegetables are tender.
  4. Finish & Serve
    • Add Italian seasoning, salt, pepper, kale, cabbage, and lemon juice during the last 2–3 minutes.
    • Adjust seasoning to taste.
    • Serve hot, garnished with fresh parsley.
