- 2 small–medium yellow potatoes, peeled and cubed
- 1 tsp dried thyme
- ½ tsp dried basil
- 1 tsp smoked paprika
- 1 large bunch curly kale (approx. 6–7 cups, packed)
- 1 litre low-sodium vegetable broth
- Juice of ½ lemon
- 1 cup freshly grated parmesan cheese
- Salt and black pepper, to taste
Instructions
- Sauté Vegetables
- In a large pot, heat olive oil over medium-high heat.
- Add garlic, onion, broccoli, potatoes, thyme, basil, and smoked paprika.
- Cook for 7 minutes, stirring frequently, until vegetables are lightly softened.
- Add Kale
- Stir in kale and cook for 2 minutes until wilted.
- Simmer
- Add vegetable broth, lemon juice, and parmesan.
- Season with salt and pepper.
