  • 70 g crackers of your choice, I used saltines
  • a big handful of arugula and fresh spinach
  • 1 tsp olive oil
  • 225 g cream cheese, softened
  • 1 cup cooked shrimp, chopped
  • 1 small cucumber, finely chopped
  • 1/2 shallot, minced
  • 1 tsp chives, chopped
  • 1/2 small lemon, zest, and juice
  • fresh dill, whole cooked shrimp, and chive blossoms(optional) to garnish

Blend crackers, arugula and spinach, and olive oil. Form the “crust” in a 6” mold, making sure to press it well. Mix the cream cheese, chopped shrimp, cucumber, shallot, chives, lemon zest, lemon juice, and Cajun spice, then top the crust with cheese mixture. Chill in the fridge for 15 minutes. Remove the mold. Garnish cheesecake with fresh dill, whole shrimp, and chive blossoms if using.
