  • 1/4 cup butter (melted)
  • 2 cloves minced garlic
  • 3/4 cup grated parmesan cheese
  • 1 teaspoon paprika
  • 600 g  boneless cod fillets ( or any other white fish)
  • 1 tablespoon fresh chopped parsley
  • 1 tablespoon fresh lemon zest
  1. Preheat the oven to 400°F and line a baking sheet with parchment.
  2. Whisk together the butter and garlic in a shallow dish and combine the parmesan and paprika in a separate dish.
  3. Dip each fillet into the butter, flipping to coat both sides, then dredge in the parmesan mixture and place on the baking sheet.
  4. Sprinkle the fillets with parsley and lemon zest then bake for 15 minutes until the flesh flakes easily with a fork. Serve hot.
