Ingredients

For the Base

  • 0.5 cup walnuts, coarsely crushed
  • 0.5 cup breadcrumbs
  • 1 tbsp white sesame seeds
  • 5 tbsp melted butter

For the Filling

  • 1.5 cup cream cheese
  • 3 tbsp fresh cream
  • 2 tbsp cornflour mixed with 4 tbsp milk ( for a low carb version replace with 1 egg and 2 egg whites)
  • 1 tsp salt

For the Caramelised Topping

  • 1 tbsp butter
  • 8–10 garlic cloves, finely chopped
  • 1 onion, thinly sliced
  • Salt to taste
  • 8–10 mushrooms, thinly sliced
  • 1 tbsp oregano
  • 1 tbsp chilli flakes

Instructions

  1. Prepare the Base
    • Mix walnuts, breadcrumbs, sesame seeds, and melted butter.
    • Transfer to a parchment-lined mould, press flat, and bake at 180°C for 10 minutes.
  2. Make the Filling
    • Combine cream cheese, fresh cream, cornflour mix (or eggs) and salt until smooth.
  3. Caramelise the Onions & Mushrooms
    • Heat butter in a pan. Add garlic and onion, sauté for 2 minutes.
    • Add salt, mushrooms, oregano, and chilli flakes. Cook until caramelised.
  4. Assemble & Bake
    • Stir half of the mushroom-onion mix into the cheese filling.
    • Pour into the baked crust. Bake at 180°C for 20 minutes or until set.
  5. Serve & Enjoy
    • Demould, garnish with the remaining mushroom topping and pistachios.
    • Slice, serve warm, and enjoy this wholesome, nutrition-packed dish.
