Serve 4
Ingredients
Cooking spray
2 medium zucchini
1 large egg, lightly beaten
½ cup grated Parmesan cheese
⅓ cup whole-wheat flour
1 teaspoon garlic powder
1 teaspoon onion powder
¼ teaspoon ground pepper
½ cup sour cream
2 tablespoons chopped fresh mint
Directions
Step 1 – Preheat air fryer to 375°F for 10 minutes. Generously coat the fryer basket with cooking spray.
Step 2 – Grate zucchini on the large holes of a box grater over a clean kitchen towel. Gather the grated zucchini in the towel and squeeze over the sink to remove as much liquid as possible. Transfer the zucchini to a medium bowl. Add egg, Parmesan, flour, garlic powder, onion powder and pepper; stir until combined. Shape the mixture into 8 patties (about 3 inches wide).
Step 3 – Working in batches if necessary, coat the tops of the patties with cooking spray. Arrange them in a single layer in the fryer basket. Cook for 7 minutes; flip the patties and continue to cook until crisp and well browned, about 7 minutes more. Serve with sour cream and mint.
